1 package fudge cake mix (18 1/4 oz)
1/2 c cake flour measured then sifted
1 egg
3 T water
cooking spray

3 12 oz semi-sweet chocolate chips
3/4 tsp peppermint extract
3 T melted shortening

Directions:
Directions:
Combine the cookie ingredients in large bowl. Add the water a little bit at a time until the dough forms. Chill for 30 minutes. Preheat oven to 350º. On a lightly floured surface, roll out a portion of the dough to just under 1/16 of an inch thick. To cut, use a lid from a spice container. Arrange the dough rounds on a cookie sheet that is sprayed with Pam. Bake 10 minutes. Remove the wafers from the oven and cool completely. Combine chocolate chips with extract and shortening in a microwave glass bowl. Heat on 50% power for 2 minutes, stir gently, then heat an additional minute.Stir once again and if not smooth zap for 30 seconds longer. Use fork to dip each wafer in the chocolate. Place the cookies on a waxed paper lined baking sheet. Refrigerate until firm.
