4 c spinach
1 c celery, chopped
2 green onions, sliced
1 can mandarin oranges, drained


Toasted Nuts
1/4 c slivered almonds
2 T sugar

Dressing:
1/2 tsp salt
dash pepper
2 T sugar
2 T rice vinegar
1/8 c oil
dash Tobasco sauce
1 T snipped parsley

Directions:
Directions:
Shake dressing ingredients in jar. Refrigerate. For the toasted almonds: Cook over low heat, stirring constantly until sugar is melted and almonds are coated. Cool. Break apart and store at room temperature. For the salad, tear spinach into bite sized pieces. Add celery and green onion, chill. At serving time, add mandarin oranges, almonds, and dressing. Mix well. This is very good.
