Refrigerator Dinner Rolls Recipe

5 - 6 C all purpose flour
1/2 C sugar
1 1/2 tsp salt
2 pkg yeast
1 C milk
2/3 C water
1/4 C butter or margarine
2 eggs at room temperature

In a large mixing bowl stir together 2 C flour,yeast and salt.

Heat milk, water and butter to 115 - 120º; do not let the temperature reach 140º.
(Butter does not need to melt.) Add to dry ingredients and beat at medium speed of mixer for two minutes. Add 3/4 C of flour and eggs, beat on high for two minutes.

Gradually add flour and continue beating until a stiff dough forms and mixture leaves the side of the bowl. Knead until smooth and elastic, approximately 8 minutes. Kneading time will be reduced if you use a dough hook to mix.

Cover dough and let rest for twenty minutes. Punch dough down. Divide into three equal parts. Shape into dinner rolls and place in a greased pan. Brush oil lightly on top of rolls and cover loosely with plastic wrap. Let set at room temperature for two hours or refrigerate for two - twenty four hours. Remove from refrigerator and let set at room temperature for at least ten minutes, longer if possible. Bake at 375º for 12 - 15 minutes.
