Baked 9" pie shell.
3 egg yolks beaten; 1 c. sugar
1/4 tsp. salt; 1 3/4 c. boiling water
1/4 c. vinegar; 1/4 c. cornstarch
1/4 c. cold water; 1 tsp. lemon extract
Meringue: 3 egg whites, 1/4 c. sugar

Directions:
Place egg yolks, sugar and slat in pan. Mix well. Gradually add boiling water, stirring constantly. Add Vinegar and cornstarch dissolved in 1/4c. water. Stir over medium heat until thick and smooth. Pour into pie shell.

Meringue: beat egg whites until stiff with an electric mixer set on medium, 3 to 5 minutes. Beat in 1/4 cup sugar until the mixture holds firm peaks and is glossy. Spoon meringue over cooled filling, swirling the meringue into peaks. Place in 350 degree oven bake until the meringue turns golden brown, about 10-12 minutes, watching carefully to avoid burning.

Vinegar Pie. This recipe was adapted from a lemon pie recipe used by prairie cooks (my grandma) when the nearest lemon was "fifty miles away by oxcart.
