2 1/2 qt. vegetable stock
4 cups lentils, picked over, rinsed and drained
1/2 cup onion, finely chopped
1/4 cup celery, finely chopped
1/4 cup carroty, finely chopped
1 tsp turmeric
1 tsp. minced garlic
2 tsp. curry powder
1/2 tsp. ginger powder
1 cup lemon juice
1/2 preserved lemony, finely chopped
Salt and pepper to taste

Directions:
Directions:
Combine stock, lentils, onion, celery, carrot, turmeric, garlic, curry and ginger in a large pot. Bring to a boil, lower temperature then simmer uncovered until lentils are cooked through, about 20 minutes.

Stir in lemon juice, preserved lemon, and salt and pepper to taste.
