Pastry -
2 c. flour
1/2 tsp baking powder
1/2 tsp of salt
3/4 c. lard or other shortening
1 tsp lemon juice
2 egg yolks
1/3 c water

Apple filling -
1 1/2 c. sugar
3 lbs. cooking apples
1 tsp cinnamon
1/2 tsp salt
2 T corn starch
1 1/2 c. water

Mix lemon juice, egg yolks and water together. Mix together flour, baking soda, and salt in a bowl. Add lard into dry ingredients until mixture resembles coarse crumbles. Stir egg mixture into flour mixture gently with fork. Turn out into wax paper. Wrap securely and chill for at least 6 hours or over night.
Peel, core, and cut apples into sixteenths. Combine sugar, cinnamon, salt and corn starch in sauce pan. Add water and cook for 5 minutes; making sure to stir. Add apples and cook for 10 more minutes.
Divide dough in half. Roll one piece at a time on generously floured surface into 11X15 rectangles. Roll dough up on rolling pin loosely. Turn out into 13X9" baking pan. Bring dough up against the sides of the pan about 1", pour apple mixture into pan. Roll remaining dough to fit onto of apples. Cut steam vents, lay over apples. Press edges of dough firmly together and seal.
Bake in 450º oven for 20 minutes reduce heat to 350º. Bake for 30 minutes more then cool pan on rack.
