8 trout fillets
2 eggs
2/3 c grated Parmesan cheese
2 tbls vegetable oil

Directions:
Directions:
In a shallow bowl, beat the eggs. Dip trout in egg then dredge in Parmesan cheese. Shake off excess. Heat oil in a large skillet over high heat. Brown trout lightly on both sides until fish flakes easily with a fork about 5-7 minutes.
