2 eggs
3/4 C vegetable oil
1/4 C milk
2 tsp vanilla
2 C flour
1 C packed brown sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 1/2 C shredded carrots
1 - 1 1/2 C shredded apples
1/2 C raises or craisens or cranberries
3/4 C silvered almonds

Directions:
Directions:
Heat oven to 350 degrees. Spray 18 muffin cups. In large bowl beat eggs, oil, milk and vanilla. Add flour, brown sugar, baking soda, cinnamon and salt. Stir only until moistened. Stir in shreds and fruit. Sprinkle almonds on top. Fill muffin 18 cups. Bake 20 - 25 minutes. Cool 5 minutes then remove.

I added chopped walnuts to the batter and sprinkled pumpkin seeds on top before baking. Yum!
