Ingredients: 1½ pounds roll pork sausage (hot or mild) 1 package (5½ oz.) herb seasoned croutons 2 cups shredded sharp cheddar cheese 2 cups shredded pepper jack cheese ¼ cup minced onions 8 eggs, beaten 2 cups half and half 1½ cups milk 1½ teaspoons dry mustard salt and pepper to taste garnish with red and green bell pepper, if desired

Directions:Preheat oven to 350 degrees when ready to bake.
Prepare the night before by cooking the sausage in a large skillet until browned. Drain, crumble and set aside. Spread the croutons on bottom of a lightly greased 9 x 13 inch (3 qt.) baking dish. Cover croutons with cheddar and pepper jack cheeses. Sprinkle cooked sausage and onion over cheeses. In a large bowl, beat together the eggs, cream, milk, mustard and salt and pepper. Pour the mixture evenly over sausage. Cover and refrigerate casserole for at least 8 hours. Bake at 350 degrees for 40 to 60 minutes until set. Let stand 20 minutes before serving.
