1½ pounds roll pork sausage (hot or mild)
1 package (5½ oz.) herb seasoned croutons
2 cups shredded sharp cheddar cheese
2 cups shredded pepper jack cheese
¼ cup minced onions
8 eggs, beaten
2 cups half and half
1½ cups milk
1½ teaspoons dry mustard
salt and pepper to taste
garnish with red and green bell pepper, if desired

Preheat oven to 350 degrees when ready to bake.

Prepare the night before by cooking the sausage in a large skillet until browned. Drain, crumble and set aside. Spread the croutons on bottom of a lightly greased 9 x 13 inch (3 qt.) baking dish. Cover croutons with cheddar and pepper jack cheeses. Sprinkle cooked sausage and onion over cheeses. In a large bowl, beat together the eggs, cream, milk, mustard and salt and pepper. Pour the mixture evenly over sausage. Cover and refrigerate casserole for at least 8 hours. Bake at 350 degrees for 40 to 60 minutes until set. Let stand 20 minutes before serving.
