1 1/2 c diced peeled ripe avocado (2 avocados)
1/2 c diced seeded tomato (1 small)
1/4 c finely chopped fresh cilantro (optional)
1/4 c finely chopped onion (Vidalia/sweet onions are best)
2 Tbsp fresh lime juice (or lemon)
1/4 tsp salt
2 cloves garlic, pressed or minced

Combine all ingredients. Serve immediately with tortilla chips.

Tips: - If you have any left over, place in small bowl it just fits into and place plastic wrap touching the top surface, and refrigerate. It is best used right away, though.
- It is tricky to get ripe avocados. The outer skin is black and they give slightly when pressed when they are ripe. However if you buy them ripe they are often badly bruised since they bruise easily when ripe. I get the best results buy buying them almost ripe a day or two ahead and letting them ripen on my counter.
- To cut an avocado, slice around the center lengthwise cutting in to the large pit in the middle. Grasp gently and twist one side to remove off the pit. Take a sharp knife and nick the pit right near the flesh of the avocado, pull out and discard. Cut the avocado lengthwise into slices while still in the black shell. (If dicing, cut crosswise into cubes). Take a large table spoon and scoop neatly around the inside of the shell, freeing the cubes or slices.
