1 tsp oil
2 pork loin chops, cut 3/4 inch thick (about 12 oz)
1/4 c chicken broth
1 Tbsp peanut butter
1 green onion, thinly sliced
1 tsp lemon juice
1/4 tsp garlic powder
1/4 tsp ground ginger (try 1/8 tsp?)
Hot cooked rice noodles
2 Tbsp chopped peanuts

Preheat oil in a large skillet over med-hi heat. Add chops to skillet, then reduce heat to Med. Cook for 7 minutes. Turn chops over. Continue cooking for 5 to 8 minutes more or till chops are no longer pink.
Remove pork chops, cover to keep warm. Drain off fat in skillet. For sauce, in the same skillet stir together broth, peanut butter, onion, lemon juice, garlic powder and ginger. Cook and stir over Med heat about 30 seconds or till slightly thickened. (Sauce should be smooth). Serve chops atop noodles, spoon sauce over, sprinkle with chopped peanuts.
