2 15 oz cans black beans, rinsed and drained
1 17 oz can whole kernel corn, drained *can sub frozen corn, frozen 'roasted' corn is great
2 lg tomatoes, chopped
1/2 to 1 red onion, chopped
1/4 c fresh cilantro, chopped
1/4 c lime juice.
grated lime peel (optional)
2 Tbsp olive oil
2 Tbsp red wine vinegar
1/4 tsp ground red pepper
1 4 oz can diced green chilis (optional)
1 lg avocado, peeled and chopped. (optional, add when ready to serve)

Directions:

Combine all ingredients. Refrigerate till ready to serve. Add avocado if using when ready to serve.
