1 cup Diamond of California chopped walnuts
1 apple, diced ¼-inch
2 tablespoons maple syrup
1 cup all-purpose flour
¾ teaspoon baking soda
¼ teaspoon table salt
1 teaspoon cinnamon
1 cup granulated sugar
½ cup vegetable oil
⅓ cup buttermilk
1 whole egg, plus 1 yolk
1 teaspoon vanilla extract

Directions:

Preheat oven to 350°F. Mix together flour, baking soda, salt and cinnamon and set aside. Whisk together sugar, oil, buttermilk, eggs and vanilla. Pour the dry ingredients into the wet ingredients and mix until blended together.
In a separate bowl, mix the apple and walnuts with the maple syrup.
Grease an 8-inch cake pan and spread the apple-walnut mixture over the bottom evenly. Pour the batter over the apples and walnuts and spread to cover evenly. Bake for 45 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes. Place a plate over the cake pan and turn upside down. Allow the cake to steam for 1-2 minutes and remove pan. Eat when cool.
Can sprinkle with powdered sugar if desired.
