6 potatoes, peeled and diced
1 onion, diced
1 t. salt
1 pint half and half (need enough to cover potatoes and dumplings)

Dumplings:
3 eggs
1 cup milk
1/2 t. salt
enough flour to make a firm dough, but not real stiff (around 2 cups)

Directions:
Directions:
Peel and dice potatoes. Dice onion. Put in sauce pan and cover with water. Bring to a boil. Add 1 t. salt.

Make dumplings by beating 3 eggs, add 1 cup milk and 1/2 t. salt. Add enough flour to make a firm dough, but not real stiff.

Drop dumplings by teaspoon into boiling potato water. Boil until potatoes are tender and dumplings are cooked. Drain water. Add enough half and half cream to cover the dumplings and potatoes. Salt and pepper to taste.

Another variation: Fry hamburger and onion until brown. Drain grease. Pour hamburger mixture over potatoes and dumplings. Add enough half and half to moisten the mixture.
