5 - 6 medium red potatoes
1/4 cup finely chopped onion
1/4 cup finely chopped celery, including some leaves
1 dill pickle, chopped
2 T. dried parsley
6 strips bacon, cooked crisp and crumbled
1/2 to 1 t. salt
1/4 t. pepper
1 1/2 T. vinegar
4 T. vegetable oil
1 to 1 1/4 cups mayonnaise

Directions:

Cook potatoes in salt water until tender (30-40 minutes). Cool completely in refrigerator. Peel and cut into thin bite-sized pieces. Place in large bowl.

Add onion, celery, pickle, parsley and bacon to the bowl with the potatoes. Sprinkle salt, pepper, vinegar and oil over all. Gently turn all ingredients over with a wooden spoon until well mixed. Add mayonnaise and turn again until well moistened. Refrigerate for several hours before serving. Serves 6 - 8.
