1 pound sweet potatoes
1/2 cup butter, softened
1 cup white sugar
1/2 cup milk
2 eggs
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon pure vanilla
1 unbaked pie shell

Directions:
Directions:
Peel potatoes, cut into cubes and boil until soft. Drain and mash. Add butter and mix well with mixer. Stir in sugar, milk, eggs, cinnamon, nutmeg and vanilla. Beat with mixer until smooth. Pour into unbaked pie crust. Bake at 350º for 60-70 minutes until inserted knife comes out clean. Pie will puff up like a souffle and then sink down as it cools.

You can cover the edge of the pie crust with foil around the outside to keep it from browning too much as the filling needs time to cook through the center. Serve with whipped cream and/or pecans as desired.
