1/4 c. milk

Spray skillet with cooking spray; heat to medium heat. In small bowl, whisk eggs and add milk gradually. Pour into heated skillet. As eggs begin to set on the bottom of the pan, lift the cooked part and allow thin, running part to flow to bottom. Stir rarely to avoid separating the mixture into bits. Cook about 3 minutes.

If adding peppers &/or onions, cook first in skillet before eggs in order to soften; then add eggs to skillet. Can top with cheese at the end.
