1/2 c. yellow cornmeal
1/2 c. cold water
1 1/3 c. water
1 lb ground meat
1 c. (1 large) onion, chopped
1 c. (1 medium) green pepper, chopped
1 can kidney beans, rinsed and drained
1 can (10 oz) enchilada sauce
1/2 c. shredded Cheddar cheese

Mix cornmeal and cold water; set aside.

Heat remaining water to boiling in saucepan. Gradually add cornmeal mixture to boiling water, stirring constantly to avoid lumps. Heat to boiling, stir constantly; reduce heat to low. Simmer uncovered about 10 minutes, stir occasionally, until very thick.

While cornmeal is simmering, brown meat with onion and peppers in skillet (about 6 minutes); drain if necessary. Stir in kidney beans and enchilada sauce.

Spoon hot, thick cornmeal mixture over beef mixture in a ring around the edge of the skillet. Cover and simmer 5 minutes until heated through. Sprinkle with cheese and serve in 6 wedges.
