Spray roaster with vegetable oil. Clean turkey inside and out. Run water through inside for a while. Salt turkey, inside and out. Stuff with dressing - fill neck cavity first (don't overfill). Fill inside of turkey. Pull skin over opening. Use pins to secure. Salt and pepper outside of turkey.

Add approximately 1 cup of water to cover bottom of roaster 1/4 - 1/2 inch. Cover. Bake at 325 degrees for approximately 4 hours (baking time depends on size of bird). During the last hour, uncover and baste the turkey every 20 minutes to brown the turkey. If it is getting too brown, put the cover back on the roaster.

After taking turkey out of the oven, take dressing out of the turkey before taking the turkey out of the roaster. Put dressing in bowl and cover with foil until time to serve.
