1 c. butter
2 1/4 c. brown sugar, packed
2 c. half and half or light cream
1 c. light corn syrup
1 t. vanilla

Line an 8x8 or 9x9 inch pan with foil, extending the foil over the edges of the pan. Butter the foil. Set pan aside.

In a heavy 3 quart saucepan, melt butter over the low heat. Add brown sugar, half and half, and corn syrup. Mix well. Cook and stir over medium high heat until mixture boils. Clip a candy thermometer to the side of the pan. Reduce heat to medium, continue boiling at moderate, steady rate, stirring frequently until the thermometer registers 248º--firm ball stage (45-60 min).

Remove saucepan from heat. Stir in vanilla. Quickly pour mixture into the prepared pan. When caramel mixture is firm, use foil to lift it out of the pan. Use a buttered knife to cut into 1 inch squares. Wrap each piece in wax paper. Makes about 2 pounds.

*Can add chopped, roasted nuts to bottom of lined pan if you want nuts in it.
*You can do half white sugar and half brown sugar for a different flavor.
