a base (such as a grapefruit, orange, or potato)

STEP 1
Remove small slice from the top of the radish. Then make 4 or 5 (or more) shallow vertical cuts from the top to close to the stem end. The number of cuts depend on the size of the radish. Soak the radishes in ice water for several hours in the refrigerator until the petals open.

STEP 2
Put a toothpick into the bottom of each radish rose. Attach to a base such as a grapefruit, orange, or potato. Fill in between the radishes with clusters of parsley that cover the base and hide the toothpicks.

STEP 3
To keep fresh looking, cover with damp paper towels and refrigerate until you fix the platters. You can add to the center of the platter or one on each end.
