1/4 c. butter
1 1/2 c. onion, diced
2 T. all-purpose flour
2 c. whole milk
2 cloves garlic
2 1/4 cups shredded cheddar, mozzarella and Monterey divided.
1/3 c. chives, snipped
4 large Yukon golden potatoes, skins on, thinly sliced

Preheat oven to 375º. To make sauce, melt the butter in a medium saucepan over medium heat, add onions and cook until tender. Stir in the flour, add milk and garlic and mix thoroughly. Once it starts to bubble, remove from heat and add 2 cups of cheese - set aside. Take 9x9 casserole dish and spray with cooking spray. Add a single layer of potato slices on bottom of casserole dish, followed by a sprinkle of chives. Add another layer of potatoes followed by more chives. Repeat steps with remaining potatoes. Pour sauce over potatoes. Sprinkle the top with remaining 1/4 cup of cheese and another sprinkling of chives. Bake for 60 minutes until golden brown.
