1 can pinto beans
1 can black beans
1 can hominy (or white corn)
1 red onion
1 each: red, green and yellow pepper
1/2 cup sugar
1/2 cup white vinegar
1/3 cup olive oil

Directions:
Directions:
Combine sugar, vinegar and oil in small pot. Heat to a boil, cook until the sugar dissolves (a minute of two). Let cool. Chop/mince peppers and onion. Rinse and drain beans and hominy with water. Combine all ingredients and refrigerate for a few hours before serving.

Tastes best if you make a day ahead. I serve this with large tortilla chips or the tortilla chip scooper type chips.
