Basic Pastry dough for 9 inch two crust pie
4 c fresh or frozen blueberries
1/3 c flour
1 c sugar
1/8 tsp salt
1 Tbsp lemon juice
1 Tbsp butter

Directions:
Directions:
Preheat the oven to 425º. Line the pie pan with half the pastry dough. Wash and pick over the blueberries if using fresh, if using frozen it is not necessary to defrost them. Mix the flour, sugar, and salt in a large bowl. Add the blueberries and lemon juice and toss well. Pile the mixture into the lined pie pan and dot with the butter. Roll out the top crust and drape it over the pie (it may help to gently fold in quarter, place on pie, then unfold). Crimp or flute the edges and cut several vents in the top. Bake for 10 minutes, lower the heat to 350º and bake for 30-40 minutes or until the top is browned.
