1 c butter, softened *can sub cream cheese for half of butter
1 2/3 c graham cracker crumbs
1 c peanut butter
1 lb confectioners sugar
12 oz (2 c) chocolate chips

Single recipe: 9x13 pan
Double recipe: one 12x17 jelly roll pan.

Mix butter, graham cracker crumbs, peanut butter and sugar by hand, pressing and squeezing with your fingers until well incorporated and no longer crumbly.
Alternative: Using a sturdy stand mixer, mix butter and peanut butter until creamy, scrape bowl. Add cracker crumbs gradually mixing after each addition. Add confectioners sugar gradually mixing after each addition. When it gets too stiff to mix, dump in a large bowl and mix the remainder by hand.

Press into a greased 9x13 pan. Refrigerate at least one hour, preferably 2 hours. Melt chocolate chips in microwave: 1 min on high, stir, then repeat 30 seconds/stir until melted. Spread over peanut butter mixture.

Immediately cut into small squares with a chopping (heavy) knife. Let cool fully. Remove from pan with metal spatula, chocolate will have hardened but will break along the 'cut lines'.
