1 c. canned pinto beans, rinsed and drained
1 c. salsa
4 6-inch corn tortillas
2/3 frozen corn
1/2 c. shredded cheddar cheese (or Mexican blends)
1/2 c. shredded lettuce

Directions:
Directions:
1. Lightly coat round pie plate or dish with cooking spray; set aside. Place beans in small saucepan; slightly mash beans. Cook and stir beans over medium heat for 2-3 minutes. Set aside.
2. Spoon 1/4 c. salsa into bottom of prepared pie plate. Top with 1 tortilla. Layer half of the mashed beans, 1 tortilla, corn, 1/4 c. of the cheese, 1/4 c. salsa, 1 tortilla, remaining beans, remaining tortilla, and remaining salsa.
3. Cover with foil; bake in 450º oven for 12 minutes. (Or cover with plastic wrap and microwave for 4 minutes) Remove cover. Sprinkle with remaining cheese.
4. Bake uncovered 3 minutes more (or microwave 30 seconds). Top with shredded lettuce. Serves 4.
