1/2 c. chopped onion
1/2 c sliced celery (1 stalk)
1/2 c. sliced carrots
1/2 c. fresh mushrooms, if desired
1 T butter/margarine
1 (14 oz) can chicken broth
1 can cream of chicken soup
1 c. water
1 (6.5 oz) chicken-flavored rice pilaf mix
1/8 tsp black pepper
2 1/2 c. milk
2 c. chopped cooked chicken (2-3 breasts)

Directions:
Directions:
1. In a large saucepan, cook onion, celery, carrots, and mushrooms in butter over medium heat until tender.
2. Add chicken broth, soup, and water. Stir in pilaf mix with the seasoning packet and pepper. Bring to boiling; reduce heat. Simmer, covered, about 20 minutes or until rice is tender. Stir occasionally.
3. Stir in milk and cooked chicken; heat through.
