1/2 cup sugar
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking sda
2 cups flour
1/2 cup coconut oil or butter
2 eggs
1 - 20 oz can of crushed pineapple
optional - 1/2 cup or so coconut

Directions:
Directions:
Save 2 big tbsp. of pineapple and juice for icing.
Mix all the ingredients together. DO NOT use mixer and do not grease pan. Bake at 350* for 30 - 40 minutes.

Icing...8 oz softened cream cheese, 1/2 cup soft butter, 1 tsp. vanilla, powdered sugar, the reserved pineapple, heaping tbsp of apricot jam if you have it, and some coconut.

In large bowl cream together the cream cheese and butter. Add the vanilla and jam, followed by enough powdered sugar. I like this cake with a loose icing so that when you cut and serve it spills down the edge. Stir in the cocnut if desired.
