1 1/2 c diced cooked chicken breast (2 breasts is enough)
1 can cream of chicken soup
1 c. chunky salsa (your choice on how hot!)
6 T sour cream
1 tsp parsley flakes
2 c hot cooked rice (usually 1 1/3c uncooked rice cooks to 2 cups)
1/3 c. shredded cheddar cheese

Directions:

Preheat oven to 350º. Spray 8x8 baking dish with nonstick cooking spray. In a large bowl, combine chicken, soup, 1/2 c salsa, and 2 T sour cream. Add parsley, rice, and cheddar cheese. Mix well to combine. Pour mixture into prepared baking dish. Bake 20 minutes. Combine 1/2 salsa and 4 T sour cream. Spread over top of casserole. Continue baking 10 minutes. Let set 2-3 minutes on cooling rack. Cut into 6 servings.
