2 onions, chopped
4 garlic cloves, chopped
2 tablespoons olive oil
2 cups potatoes, chopped (russet, fingerlings, red, or golden)
6 carrots, sliced
2 bell peppers, chopped
3 stalks celery, sliced
2 quarts chicken broth of choice
mushrooms
snow peas
1 whole chicken, roasted (I buy them already roasted and seasoned)
Hold chicken carcass to add to soup.
Optional: leftover cooked veggies, rice, plain pasta, beans, etc.

Directions:
Directions:
Remove meat from roasted chicken, shred or chop for soup. Set aside chicken and carcass. Saute onion and garlic in hot olive oil until golden brown. Add other ingredients through the chicken and carcass. Salt and pepper to taste. Add herbs of choice. Simmer until veggies are done to your likeness. Add leftovers of choice, any veggies, rice, plain pasta, beans, tomatoes, etc. Simmer for another 5-10 minutes.
