1 1/4 lbs red potatoes
2 1/2 cups of water
3 bouillon cubes
6-8 cloves of garlic, minced
1/4 C cream cheese
2 Tbsp chopped parsley

Directions:
Directions:
In large sauce pan boil potatoes in water and bouillon. Bring to a boil, reduce heat, cover and cook 20 minutes, or until potatoes are tender. Drain reserving 1/2 Cup cooking liquid.
Using potato masher mash (or beat using electric mixer) potatoes stirring in garlic and cream cheese, gradually beat in cooking liquid until light and fluffy, until light and fluffy. Stir in parsley and serve hot.
