2 TBSP CELERY SEED
2 TBSP WHITE MUSTARD SEED (1 TSP CARAWAY SEED IF DESIRED)
2 GREEN PEPPERS, CHOPPED
2 C SUGAR
SALT TO TASTE
4 TBSP GROUND HORSERADISH
VINEGAR TO ALMOST COVER

BOIL THE BEETS UNTIL TENDER, BUT NOT SOFT. PEEL AND CHOP. THEN MIX WITH THE REST OF THE INGREDIENTS; HEAT BUT NOT BOIL; BOTTLE AND SEAL.
