6 T butter
3/4 C all purpose flour
1/2 C flaked coconut
2 T brown sugar
1 quart vanilla ice cream
1 8 oz pkg cream cheese, softened
2 T lemon juice
1 8 oz can crushed pineapple, drained
Directions:
Directions:
In saucepan melt butter. Stir in flour, coconut and brown sugar. Press mixture into bottom of 8x8x2 inch baking pan. Bake in 325º oven 20 minutes. Cool. Stir ice cream to soften. In large mixer bowl beat cream cheese and lemon juice till fluffy. Add ice cream by spoonfuls; beat smooth. Stir in pineapple. Spoon into prepared crust. Freeze overnight. To serve, let stand 15 minutes. Cut into squares.
