4 c flour, any mix of white, oat* or whole wheat
1 Tbsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp ground ginger
1/2 tsp ground cloves
1 tsp cinnamon
1/2 tsp grated nutmeg
2 c packed brown sugar
2/3 c oil (olive or canola)
4 eggs
1 29 oz can pumpkin
2 Tbsp milk or water

Optional: 1/4 c oat bran, 2-4 Tbsp chopped dates, 1 Tbsp grated fresh ginger, 1 c chocolate chips, 1/2 c chopped pecans

*Process oatmeal in food processor or blender until the consistency of flour. Can substitute another cup of white flour.

In a mixing bowl, stir together flours, baking powder and soda, salt, and spices. In a large mixing bowl beat brown sugar and oil, beat in eggs. Add pumpkin and milk, mix well. Add flour mixture, mixing well. Stir in dates, nuts, choc chips if using.

Grease 2 muffin tins and sprinkle oat bran in the bottom and tip each way to disperse (or line with cupcake papers). Fill two 12 muffin tins. Bake at 375 for 22-25 mins (Until a toothpick inserted in center comes out clean)..
OR
Pour into 2 greased loaf pans, and bake 50-60 minutes at 350.

DO NOT OVERCOOK.
