1 c oatmeal
1 c orange juice (or pureed orange pulp)
2 c flour
1 c oat flour*
1 c sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 c olive oil
2 eggs
1 tsp vanilla extract
2 c blueberries (or more)
Optional: grated orange zest
Optional: 1/4 tsp almond extract
Optional: sugar/cinnamon mixture for topping

*zest, peel and seed several oranges, mandarins or clementines. Puree in food processor or blender and use pulp for the Orange Juice in this recipe. Add the zest.
*Make oat flour by processing oatmeal in a blender or food processer until it has the texture of flour (or substitute white flour.)

Preheat oven to 350. This is a double recipe, makes 24 muffins.

Combine oats and orange juice (or pureed orange pulp and zest if using). Mix together flour, sugar, baking powder, salt and baking soda. Mix into oat/OJ mixture along with oil, egg, vanilla and almond flavorings If too stiff add 1 Tbsp OJ. Mix well. Stir in blueberries. Spoon into paper lined muffin tins (or greased tins) and sprinkle with sugar/cinnamon mixture if desired.

Bake for 18 to 22 minutes or until tests done. (Check before removing: may take longer especially if using frozen blueberries).

Healthier option: use 1c whole wheat flour, 1 c white flour, 1 c oat flour
