1 envelope unflavored gelatin
6 T brown sugar
1/2 tsp. ground cinnamon
2 eggs, separated
1 C milk
1/3 C mashed banana (1 medium)
1/2 tsp. vanilla
1/2 pint whipping cream, whipped
1/2 C finely chopped pecans

In saucepan, mix gelatin with 4 tablespoons of the sugar and cinnamon. Beat yolks with milk; blend in gelatin mixture. Let stand 1 minutes. Stir over low heat till gelatin is dissolved, about 5 minutes. Stir in mashed banana and vanilla. Pour into large bowl and chill; stir occasionally, till mixture mounds slightly when dropped from spoon. In bowl beat egg whites till soft peaks form; slowly add remaining 2 tablespoons brown sugar and beat till stiff. Fold egg whites, then whipped cream and pecans into gelatin mixture. Turn into 4 cup mold; chill till firm.
