1 1/4 C SIFTED SUGAR
3 1/2 TSP BAKING POWDER
1/2 C BUTTER
3/4 C MILK
YOLKS OF 3 EGGS
WHITES OF 2 EGGS BEATEN WITH 4 TBSP OF WATER ADDED

FILLING:

WHITE OF 1 EGG
2 C POWDER SUGAR OR CONFECTIONER'S SUGAR
GRATED PULP OF 1 SOUR APPLE.

Directions:
SIFT FLOUR ONCE, THEN MEASURE; ADD BAKING POWDER AND SIFT 3 TIMES. CREAM BUTTER AND SUGAR THOROUGHLY; ADD EGGS WELL BEATEN, THEN ADD FLOUR AND MILK ALTERNATELY, BAKE IN 2 LAYERS ABOUT 30 TO 35 MINUTES AT 350º.

FILLING:

TO THE WELL BEATEN WHITE OF 1 EGG ADD 2 C POWDER OR CONFECTIONER'S SUGAR AND THE GRATED PULP OF 1 SOUR APPLE. SPREAD THIS BETWEEN AND ON TOP OF LAYER IN WHICH 2 BANANAS HAVE BEEN SLICED.
