4 TSP BAKING POWDER
1/2 TSP SALT
2 TSP SUGAR
1 EGG
1 C BOTTLED MILK OR 1/2 C EVAPORATED MILK AND A 1/2 C WATER
2 TSP MELTED FAT

SIFT THE FLOUR, THEN MEASURE THE REQUIRED AMOUNT AND SIFT IT WITH BAKING POWDER, SALT, AND SUGAR. BEAT THE EGG UNTIL FROTHY, ADD THE MILK, THEN THE MELTED FAT, WHICH HAS BEEN MEASURED AFTER MELTING. TURN THE MILK MIXTURE INTO THE DRY INGREDIENTS ALL AT ONE TIME AND STIR QUICKLY AND VIGOROUSLY UNTIL THE DRY AND THE LIQUID INGREDIENTS ARE JUST MIXED, AND HAVE A LUMPY APPEARANCE. THIS WILL TAKE FROM 10 TO 20 SECONDS OF STIRRING OR BEATING. THEN FILL THE GREASED PANS ABOUT 2/3 FULL OF BATTER AND BAKE IN A HOT OVEN OF 425º UNTIL THE MUFFINS ARE UNIFORMLY GOLDEN BROWN AND DONE --- ABOUT 25 MINUTES. MAKES 12 TO 15 MUFFINS
