4 Tablespoons olive oil
3 garlic cloves, peeled and chopped fine
1 onion, chopped
2 zucchini, sliced
1 eggplant, peeled and cubed
2 celery stalks, sliced
2 carrots, sliced
1 green pepper, sliced
1 red pepper, sliced
8 - 10 mushrooms, sliced
3 Tablespoons flour
5 ripe tomatoes, peeled and sliced, or 1 28 oz. can crushed tomatoes
Freshly ground black pepper
4 teaspoons chopped fresh parsley
1 teaspoon oregano
1 teaspoon basil

Directions:
Directions:
In a large skilled, heat olive oil and saute garlic and onions. Lightly flour remaining vegetables, except tomatoes, and add to skillet along with tomatoes, pepper, parsley, oregano and basil. Cook over medium flame for 30 minutes. Stir, lower flame, and then simmer for 1 hour.
