3 cups flour
1 1/2 cups sugar
1 teaspoon cinnamon
1 pinch salt
1 teaspoon baking powder
1 teaspoon baking soda
3 cups shredded, unpeeled zucchini
1 cup raisins
1 cup nuts
3 eggs
2 teaspoons vanilla
1 cup oil

Directions:
Directions:
Preheat oven 350º. In a large bowl, mix together the flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, raisins, and nuts. In another bowl, beat together the eggs, vanilla, and oil. Pour over flour mixture and stir until thoroughly mixed. Turn into 2 greased loaf pans. Bake at 350º for 1 1/12 hours.
