"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

5/8 or 3/4 inch round steak, cut into pieces about the size of your hand
salt and pepper
flour
oil

Directions:
Directions:
Salt and pepper both sides of each piece. Dredge in flour. Using a hammer, mallet or the edge of a plate, work the meat on both sides until you can almost see through it. Keep adding flour to it as you go to keep it from getting sticky. In a skillet, heat vegetable or olive oil. Fry each piece, both sides. Place onto a plate and continue frying the rest of the steaks. When everything is fried, place them all back in skillet and cover with water. Put lid on and simmer. Add a little water if it gets dry.

Personal Notes:
“A favorite from Grandma Bobb. She would make this a lot at the request of me and Jill. It is classic comfort food and was a staple for dinners after church at Fall Creek Friends.” Mindy
