2 large (6 oz) unpeeled sweet potatoes
1/4 c. maple syrup
1 c. diced ham
2 T chopped pecans

Directions:
Directions:
Preheat oven to 375º. Bake sweet potatoes 45 min in 8x8 pan. Cut in half lengthwise and scoop out pulp leaving 1/4" in the shells. Place the pulp in a medium bowl, mash. Stir in syrup. Add ham and pecans; mix well. Spoon mixture into shells. Return to pan and continue baking for 15 minutes.

Microwave cooks faster (5-7 min), but oven tastes a bit better. Need to stab potatoes if microwave!
