1 lb ground beef
1 medium onion, coarsely chopped (1/2 cup)
1 bag (25 oz) Green Giant frozen mixed vegetables
1 can (14.5 oz) Muir Glen organic diced tomatoes, drained
1 jar (12 oz) beef gravy
1/2 tsp salt
1/4 tsp pepper
8 biscuits (from 25 oz bag) Pillsbury Grands! frozen buttermilk biscuits
1 box (2 pouches) Betty Crocker homestyle creamy butter mashed potatoes, prepared according to pkg directions

In 12in skillet, cook beef and onion over medium heat 8 to 10 mins, stirring occasionally, until thoroughly cooked; drain.
Add frozen vegetables, tomatoes, gravy, salt and pepper to beef mixture.
Heat to boiling.
Reduce heat to medium-low.
Cover and cook 8 to 10 mins, stirring occasionally, until vegetables are crisp-tender.
Heat oven to 375º.
Bake biscuits as directed on bag.
Serve beef mixture over prepared potatoes with biscuits.
