6 Eggs
1 tbsp. butter
1/4 cup diced onions
1/4 cup diced bell peppers
1/2 tsp. Salt
1/8 tsp. Pepper
crushed red peppers OR 1 - 4 oz. can chop green chilies— if desired
1 cup diced cooked ham (can substitute sausage or bacon if preferred)
1 cup (4oz) grated Swiss cheese (can substitute with preferred cheese – I use Monterey jack)
3 cups frozen shredded hash browns

Pre-heat oven to 350°. Combine butter, onions and bell peppers in microwavable bowl, cook in microwave on high for 3 minutes. In large bowl, beat eggs and spices together; stir in potatoes, cheese, ham, onions, bell peppers and crushed red peppers or chilies (if using). Pour into greased 9” deep pie plate or cake pan and bake for 40-45 minutes until lightly golden brown and firm in middle.
