2 Medium cucumbers, or 1 long hothouse cucumber, peeled and diced or shredded
2 cloves of garlic, minced
1 tsp olive oil
3 sprigs fresh mint, chopped, plus more for garnish
2 C plain yogurt
salt

Directions:
Directions:
combine ingredients in a bowl or a food processor. They can be blended, but the sauce should remain somewhat chunky. cover and refrigerate until well chilled, at least one hour before serving, then garnish with mint and a drizzle of olive oil.
