2 -3 Racks of Lamb

Lamb Chop Marinade: Mix all together in a Bowl
5 Fresh sprigs of Rosemary ( chopped )
1 T - Fresh chopped Thyme
1/4 c Extra Virgin Olive Oil
4 large Cloves of Garlic minced
7-8 large basil leaves - chopped
1 T Salt
1 T Pepper.

Directions:
Directions:
Place racks of Lamb on a platter. Season with salt and pepper.
Rub marinade on the lamb, cover with plastic wrap and set aside for 2-3 hours in the refigerator.

Remove from the refrigerator and set at room temperature for 45 minutes.

Heat up grill:
Grill Lamb chops and cook to medium. Depending on thickness.
season with Salt and Pepper and place on a tray


Goat Cheese and Olive Tapanade Croistini

1 French Baguette
1 small package of mild Goat Cheese

Mix in a small bowl the following ingredients:

1/2 C - minced Calamata Olives ( get the pitted ones )
1 T - minced fresh Thyme
3 T - Capers ( chopped )
1-T - finely minced Garlic
Juice of 1/2 lemon ( watch the pits )
Juice of 1/2 lime
3 T - Olive Oil
Pepper to taste
Good dash of hot sauce

Directions:
Cut Baguette into 1/4 - 1/2" slices and brush both sides with with Olive Oil, salt and pepper
Grill both sides until golden brown
spread Goat Cheese on each one and top with Olive Tapanade

Serve with Grilled Lamb chops.

Additional complimentary items: Roasted carrotsin the oven and wild rice to complete the meal.
