1 1/2 C granulated sugar
1/2 C butter
1 T grated orange peel
2 1/4 C sifted all purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
3/4 C cold water
1/4 C orange juice
4 stiff beaten egg whites
1/4 tsp. cream of tartar
ORANGE FILLING:
1/2 C granulated sugar
2 T cornstarch
1 1/2 tsp. grated orange peel
1/4 tsp. salt
3/4 C orange juice
1/4 C water
2 egg yolks, beaten
2 T butter
Directions:
Directions:
In large bowl, cream together sugar, butter till light and fluffy. Add orange peel. Sift together flour, baking powder, soda, and salt. Combine water and orange juice; add to creamed mixture alternately with dry ingredients, beating well after each addition. Beat egg whites with cream of tartar till stiff peaks form (tips stand straight). Fold in egg whites. Pour into 2 greased and floured 9x1 1/2 inch round baking pans. Bake in 375º oven for 25 minutes or till cake tests done. Cool 5 minutes; remove from pans. Meanwhile prepare orange filling.
FILLING:
In saucepan combine sugar, cornstarch, orange peel, and salt. Slowly blend in range juice, water, and egg yolks. Cook over medium heat, stirring constantly, till mixture thickens and bubbles. Remove from heat; stir in butter till melted. Cool. When cake is completely cooled, spread filling between layers. Then frost. Frosting recipe under Desserts (frosting)
