Zucchini and Onion Mexicana Recipe

4 small zucchini, sliced thin
3 slices onion
1 large garlic clove
butter or oil
1 t. chicken bouillon
1/4 c. water
sour cream
monterey jack cheese

Directions:
Directions:
Saute onion and garlic in fat until transparent. Add zucchini. Add bouillon and water. Let simmer until soft. Serve garnished with cheese and cream.

This was a recipe that we had when we went to Mexico in 1988. Margarita, my Mexican sister, fixed this from "calabazas" that they had grown on their country property. It was a hit, and when we got home, the girls would make it for themselves for several months thereafter.
