Remove meat from turkey bones and set aside. Fill a large kettle with water and put in it the bones and skin form the turkey along with 1 cup chopped onion, celery tops and salt to taste. Simmer for 2 hours. Remove bones, skin and celery tops. Add 4-6 stalks of diced celery. Cook until tenter. Add about 2 cups Minute Rice, depending on the thickness desired and boil until rice is done. Add leftover turkey gravy, some of the leftover stuffing, some of the leftover mashed potatoes and some cut up turkey meat. Add parsley for color and salt and pepper to taste.
