Caviar:

1 can black beans
1 can black eye peas
2 cups frozen corn (Trader Joe Roasted corn is best)
1 can diced tomatoes
1/4 green pepper - diced finely
1/3 cup green onions - sliced thinly
2/3 cup fresh cilantro - chopped

Optional: 1 serrano chili - diced finely

Dressing:
1/4 cup olive oil
1/4 cup red wine vinegar
1 tsp cumin
1/8 tsp black pepper

Directions:

1. Mix all "caviar" ingredients
2. Mix all "dressing" ingredients
3. Pour dressing over caviar
4. Let sit overnight before serving.
5. Serve with chips for dipping
